My family’s new favorite way to have tilapia: crunchy! I came up with this after we bought a large package of matzo crackers on clearance at a grocery store. I’m guessing that saltine crackers would work, too.
I’m afraid I don’t have an exact recipe, but I can share the basic idea. Crush the crackers and mix in Everglades seasoning (or whatever seasoning you prefer.) Dip the fish in flour first, then beaten egg, then the cracker mixture. Fry in a skillet in butter (using butter rather than olive oil or any other oil made a difference!) until fish is flaky and the crackers are golden brown. MMMMMM-mmmmm!
